In fact, very few people will match different wines according to the dishes they order. Nowadays, many of the so-called new Chinese dishes are served in a Western way, and each one serves. If it is a fixed meal, the combination of wine and meal is easy. If it is a la carte, it will complicate the meal. The variety of wines is also relatively increased, so is it not full of wine? There are basic guidelines for wine catering, but only guidelines rather than absolute. Desserts should be paired with wines of equal or higher sweetness. Otherwise, the sweetness of the food will take away the fruity or sweet taste of the wine, making the wine dry than the original.
Spicy foods also take away the fruity taste of the wine, so it can be paired with low-denier, semi-sweet, fruity or refreshing red wines. Smoked foods are best served with fruity and rich red wine. The rich food is best matched with fruity, high-concentration, high-acid red wine. The salty food can be mixed with fragrant red wine, with low tannins and rich fruit. The sour food takes away some of the fruity flavor of the wine, so it can be paired with semi-sweet, fruity, high-concentration wines. Sometimes, sour foods are also a good match with fresh wines. Fish are suitable for wines with rich fruity, high-concentration, high-acidity or semi-sweet.
